I made my original Pomegranate Lemon Poppyseed Oatmeal muffins! You can see how simple this recipe is, and the crew enjoyed it. Some even went back for seconds when the cameras stopped rolling.
You may recall several months ago on the blog that I started sharing new and original recipes. The nutrition and hydration domain of self-care is critical to our well-being and one that I struggle with. We tend to rush through the act of eating, skipping meals, and depriving ourselves of the things we want in the name of “health.” It is imperative that we reconnect with our bodies and tune into the act of eating and how we feel when we eat different foods.
In my eating disorder healing journey, I have shared bits and pieces about what it is like to feed my body from a place of love and not restriction. In the past, I would often skip breakfast as a way to restrict my intake. I would celebrate my willpower if I made it to lunch without eating, as it meant I was on track to essentially starve myself that day. Now, I try to always eat breakfast, but what to eat became the question. I don’t have a ton of time to devote to cooking something elaborate every day. I don’t feel satiated after consuming a store-bought bar of some sort, so I decided to start experimenting and creating my own breakfast options that would be satisfying, easy to make, delicious, and ideally something my husband would enjoy as well. I accomplished all of that with this recipe! I started with an apple craisin version, and from there, I broadened to create other options. Our favorite is the Pomegranate Lemon Poppy Seed Oatmeal Muffin! I am looking forward to testing out some new flavors this summer. I think Raspberry Lime or Strawberry Lemon would be tasty too!
This was my first cooking show appearance, but I doubt it will be the last! What should I make next time? More muffins? Or something else?
